Goodness gracious y’all, it’s time to make some flaky kefir biscuits! Well, being down here in the south, biscuits are a way of life. Biscuits with jam, bacon, gravy, and really just about any way you can eat one we have a way. I remember watching my great-grandma make her delicious biscuits from scratch when I was little. She’d never have the whole recipe written out if you wanted it, it was always just a little bit of this and a little bit of that.
So, the more I bake the more I realize how much of a skill that is to make things without a recipe. Southern cooking has been ingrained into me since birth, watching my great grandma cook and having the dough bowl from her mother. Although I could be biased I think Southern food is the greatest food you can have.
Biscuits already are so delicious, but, adding this raw kefir milk twist on them makes them so delectable! So, if this is your first time making southern biscuits, this is the best recipe you can start out on.
So, let’s get into how you can make your own delicious and flaky kefir biscuits.
Why Use Raw Kefir?
Kefir is something I’ve recently brought into our home and I’m absolutely loving it. It has so many beneficial yeasts and it helps your digestive system. Also, in place of buttermilk in recipes, I use raw milk kefir. We get our raw milk from a local farmer and I feed my kefir grains with it. It turns it into a beautifully thick kefir. However, it’s also a really good bacteria for your health! On WebMD.com they have a whole article on the nutrition and health benefits that come along with using milk kefir.
How To Make Flaky Kefir Biscuits
To start, here are the few tools you will need for your biscuits:
Biscuit cutter
Mixing bowl (or a large bowl)
Cookie sheet
Rolling pin
Pastry cutter (or food processor)
Measuring cups
Grater (optional for grating butter)
Now, time for the ingredients you will need for these homemade biscuits:
All-purpose flour
Cold butter (you can throw the butter in the freezer for 10-30 minutes)
Cold plain kefir (You can use homemade kefir, lifeway kefir, or any plain kefir. Just be sure it’s whole milk kefir.)
So few ingredients such an easy recipe, literally only three ingredients. Butter my butt and call me a biscuit!
Now, for the fun part. Making the fluffy biscuits:
Step 1:
Line a cookie sheet with parchment paper and preheat the oven to 450 degrees. You can also use nonstick spray on your baking sheet if you don’t have parchment paper.
Step 2:
First, place your flour in the large bowl, then add your cold butter to the flour. Use your pastry cutter to cut the butter into the flour. Then, add the cold milk kefir together and knead well (you can also use your pastry cutter or wooden spoon for this). If you don’t want to use either of those, you can use a food processor and use the low pulse mode. Knead well but don’t overdo the dough, knead until you have a cohesive dough. Just don’t overdough it, hehe.
Step 3:
Next, place your biscuit dough on a lightly floured surface. If the dough is too sticky, add more flour a tablespoon at a time. Fold the dough over itself a few times to create layers. Then, roll the dough out with your rolling pin. Roll about an inch thick and cut with your biscuit cutter. Cut with about a 4-inch round biscuit cutter, if you want them smaller, just a 2-inch cookie cutter. Or, if you don’t have that, you can use a glass cup rim. If you’re using the glass cup, don’t twist the glass press down and pull up.
Step 4: Place the circle biscuit dough on the prepared baking sheet and bake for 10-12 minutes or until golden brown.
Additionally, an optional part of this step is to baste some melted butter over the top of the biscuits before you bake them. This is what I did and they turned out so delicious. Honestly, a little extra slice of butter wouldn’t hurt as soon as you pull ’em out of the oven either! Just baste butter on them and broil until they’ve turned golden brown.
Now, let the homemade biscuits cool for a few minutes and enjoy however you’d like!

Flaky Kefir Biscuits Recipe
A delicious from-scratch biscuit recipe with only three ingredients. A perfect staple biscuit recipe in any home, especially one that uses kefir.
Ingredients
- 2 cups of all purpose flour
- 1 cup of plain kefir (cold)
- 1 cup of cold butter
Instructions
- Preheat the oven to 350 and line a baking sheet with parchment paper.
- Place flour into a large bowl and add cold butter. Cut the butter into the flour with a pastry blender.
- Add the cold milk kefir to the butter-flour mixture and mix well. Work quickly so the ingredients don't get warm.
- Knead the dough well and then pour the dough onto a floured surface.
- Fold the dough over itself a few times and roll with a rolling pin about an inch thick dough.
- Cut the dough with a biscuit cutter and place onto prepared baking sheet.
- Bake at 350 for 10-12 minutes or until they're golden brown.
Notes
Optional: before you place the biscuits into the oven, you can baste them with butter and broil them until they're golden brown. Keep an eye on them while broiling as this process goes quickly.
If the dough is too sticky, add flour in a table spoon at a time until it's not so sticky.
If your oven hasn't finished preheating before you're done cutting the biscuits, place them in the fridge until the oven has been preheated.
