Welcome back y’all, let’s make some homemade breadcrumbs with our leftover sourdough bread! I bake so much bread. I mean… SO much sourdough bread. We eat SO much sourdough bread but honestly, we do have some leftover bread sometimes. Somedays life gets busy and I forget that we have a beautiful loaf of sourdough sandwich bread sitting on the counter and it turns into a stale bread. Also, I cannot stand food waste especially when it’s sourdough. Sourdough bread is just TOO good to waste, ya know? It’s also a labor of love so it makes it so hard to just toss it ha! This is one of my favorite ways to use up any type of sourdough bread that I have on hand.
You can use fresh bread or old stale sourdough bread. Additionally, when you have leftover sourdough bread, you can make croutons! I have a whole post on how you can make sourdough croutons here, they’re so simple it’s crazy.
Also, another great way to use your old bread is to make French toast! It’s so easy to just take your stale bread mix it in an egg mixture and eat it for breakfast! Or, if you’re like us, have breakfast for dinner!
How To Make Homemade Breadcrumbs From Sourdough
There are only a couple of tools you will need for these homemade sourdough breadcrumbs. And, the only ingredient you really need is your sourdough bread and oil.
Tools you’ll need:
Baking sheet
Parchment paper (or aluminum foil)
Serrated knife or bread knife
Food processor or blender (I use a blender)
Ingredients you’ll need:
A loaf of bread. You can use any type of bread but being that I only use sourdough bread, I’ll be using that!
Olive oil or avocado oil
Also, you can add any of your favorite seasonings you love. You can use Italian seasoning, lemon zest, garlic powder, etc.
The first step in making your sourdough bread crumbs is to preheat your oven to 350. While that’s preheating, you will grab your baking sheet, line it with parchment paper, and set it aside.
Now, take your dry bread, slices of bread, pieces of bread, whatever bread you have, and slice it up.
If you have an entire loaf of sourdough bread then you may need to do a couple of batches in the food processor or blender.
Then, put your bread slices, cubes, or small pieces of bread into the bowl of a food processor or blender. Pulse bread cubes or blend them for 30 seconds or until you have tiny little pieces of bread.
Once you have all of your bread made into tiny little pieces that resemble bread crumbs, spread them out onto your prepared baking sheet in a single layer. Bake them for 5 minutes or until they are dry and lightly golden brown. If they’re not dry and golden brown after 5 minutes, bake them for an additional 5 minutes.
So easy!
Once you’ve baked them and gotten them golden brown, allow them to sit on the baking sheet until they’ve reached room temperature. Then, store them or enjoy them right away!
So, there you go! Such an easy way to make your very own homemade bread crumbs. SO much better than store-bought breadcrumbs and the perfect way to add a little more of a healthy addition to your cabinet. They save you a trip to the grocery store and they’re a delicious way to enjoy your sourdough bread further.

Homemade Breadcrumbs With Leftover Sourdough Bread
Delicious, crispy, and basic homemade breadcrumbs with leftover sourdough bread. The most perfect addition to any pantry.
Ingredients
- 1 loaf of sourdough bread (stale or fresh)
Instructions
- Preheat the oven to 350 and line a baking sheet with parchment paper.
- Slice up your sourdough bread and place it in your blender or food processor.
- Pulse or blend for 30 seconds at a time or until you have bread that resembles breadcrumbs.
- Sprinkle the breadcrumbs onto the baking sheet, placing them in a single layer.
- Bake for 5 minutes or until golden brown. If not golden after 5 minutes, return to the oven for an additional 3-5 minutes.
- Remove from oven and allow to cool to room temperature.
- Use immediately or store for later use!
How To Store Homemade Breadcrumbs
So, there are a few different ways to store your homemade sourdough breadcrumbs, the first is to place them in an airtight container. Dried homemade breadcrumbs will last in an airtight container in the pantry for about 4-6 weeks if stored away from moisture. If they’re fresh breadcrumbs (where you didn’t dry them in the oven) you can place them in an airtight container for about a week in the fridge.
How To Freeze Homemade Breadcrumbs
If you want to keep your breadcrumbs around a little longer, and you don’t plan on using them right away, you can freeze them. To me, the best way to freeze things is in a freezer bag. I picked up some reusable freezer bags from Amazon and I have not turned back! They’re so easy just to toss your food in and put them in the freezer. The homemade sourdough breadcrumbs that you’ve dried, will last about three months in the freezer. Just be sure to label and date them so you know when the time to use them up will be.
Ideas You Can Do With This Recipe
So while these are plain, you can always add your own spices! If you want Italian breadcrumbs, just sprinkle a little olive oil and Italian seasoning in a bowl with your crumbs and bake. You can also add garlic powder and onion powder to make a very flavorful bag of homemade bread crumbs.
There are so many different dishes you can use with these homemade breadcrumbs. Here’s a list to name a few:
Breaded chicken
Salmon patties
Pasta topping
Burgers
Meatballs
Meatloaf
Parmesan chicken
There are also quite a few things you can do with stale sourdough bread. I’ve made croutons, breadcrumbs, French toast, and learning more things! I absolutely love stuffed French toast, be prepared, a post will be coming soon for it.
Additionally, I’ve also made bread pudding. Bread pudding is such a great way to throw things into one casserole dish and it turns out delicious. My husband isn’t the biggest fan of bread pudding but I do enjoy it.
