There’s nothing quite like slow Sunday mornings involving milk kefir pancakes that are delicious and fluffy. I’ve recently gotten on a homemade pancakes kick and I absolutely love them. My husband doesn’t mind it either, he loves being able to put his favorite toppings such as fresh fruit, peanut butter, or just plain with maple syrup. These are some of the best fluffy pancakes I’ve ever made. They’re like regular pancakes but with a twist of a fermented milk drink turning them into fluffy kefir pancakes. I love the tangy flavor the kefir adds in place of buttermilk.
While you can buy a box of pancake mix from the grocery store, there’s nothing quite like making your own from scratch. I know exactly what ingredients are going into our food whenever I make it from scratch at home. There are also some health benefits to making your own food at home.
If you don’t have kefir, you can substitute for buttermilk and make regular buttermilk pancakes. I just like to use my fermented milk product which is kefir! Although, if you’d like to use kefir but don’t want to make your own, head on over to the grocery store to pick up some Lifeway kefir.

How to make these healthy kefir pancakes
Y’all, when I tell you these pancakes are so easy and delicious to make, I’m not lying! These are quite literally some of the best pancakes I’ve ever made or had. There are only a few things you’ll need such as:
Tools
Two mixing bowls, one medium bowl, and one large bowl
Whisk
Skillet (or nonstick pan)
Ingredients
150g all-purpose flour
25g sugar
1 tsp baking soda
1/2 tsp salt
250g milk kefir
1 egg
1-2 tsp vanilla extract
To start, whisk together your wet ingredients – the egg, kefir, and vanilla extract together in a medium bowl. Then, whisk together in a large bowl your dry ingredients – flour, baking soda, and salt.
Now, pour your wet ingredients into your dry ingredients bowl and whisk together. Make sure you don’t overmix the batter, the lumps are okay.
Let the pancake batter rest on the counter for 15 minutes and then you’re ready to bake them.
Preheat your skillet to about medium heat with a little oil (coconut oil, avocado oil, etc.). Then, pour a couple tablespoons of batter onto your hot pan and cook for about 30 seconds to a minute on one side. Cook until golden brown and then flip and repeat.
After you’ve finished cooking, top them with some delicious butter and pure maple syrup. You could even top it with some yummy berry sauce as well. This will make about 6-7 pancakes! If you’d like more, just double the recipe and enjoy.
Things you could add into your fluffy milk kefir pancakes
I like to add a handful of chocolate chips to my pancake batter. Although, my husband would prefer to use blueberries to make some fluffy blueberry kefir pancakes! In the summer, you can add fresh berries or homemade jam. There are so many different ways you can tweak this recipe, just do what you love! Pancakes always change the breakfast game for pancake Sundays, I’m honestly thinking of incorporating that into our Sunday routine. I’m sure children would love it too!

Fluffy Milk Kefir Pancakes From Scratch
These milk kefir pancakes are so fluffy and delicious. Perfect for those mornings you need a delicious breakfast in a pinch.
